Virginia Tech Dining Services is a key partner in the university’s effort to reduce food waste. Dining currently sends about 300 tons of food waste and compostable service ware each year to an off-campus composting facility, material that could eventually be processed at the planned facility at Kentland Farm. CLIFTON FORGE – “Introduction to Wine-Making” is being offered this semester through the Dabney S. Lancaster Community College non-credit program in two locations.

Taught by Judson Howard of Covington, the course is scheduled on Mondays, February 6-27, from 6 p.m. to 7:30 p.m., in Room 509, McCarthy Hall, on the DSLCC campus in Clifton Forge, and again on Mondays, March 12-26, from 6 p.m. to 8 p.m. at the DSLCC Rockbridge Regional Center in Buena Vista.

This is the first time that the course has been offered in the Rockbridge area.

Howard has been making homemade wine for the past 35 years and his entries have taken 1st, 2nd, 3rd and “Best In Show” at the West Virginia State Fair.

Participants in the course will learn not only how to make wine at home with a variety of fruits, berries, concentrate and a wine kit, but also about equipment and supplies, fermentation, bottling and storage. Tuition is $60.

To register, contact DSLCC Non-Credit Coordinator Judy Clark at 863-2863 or jclark@dslcc.edu.

Due to the nature of the product being studied, participants must be at least 21 years of age to register.

The DSLCC Rockbridge Regional Center is located at 35 Vista Links Drive, Buena Vista.
