COVINGTON, Va. (VR) – Chef Robert Fehle, the culinary arts instructor at Jackson River Technical Center, demonstrates how to butcher a hog. Using a hog donated by Jacob Wright, owner of the Merry-Go-Round Farm, students are learning best practices for processing a hog as they prepare to provide barbecued pork for an April 2 Virginia School Boards Association regional forum in Franklin County. Some of the culinary students are gaining hands-on experience by cutting the meat. Jackson River Technical Center opened as a regional vocational school in the fall of 1974 and it plays an integral role in career and technical education programs offered by Alleghany Highlands Public Schools.
