I created this dip four years ago and it is still today a favorite in my family.
It’s called, Cucumber Cheese Spread.
I create this in large quantities, so you’ll get a large container out of this spread.
Here is what you’ll need for ingredients:
• Large Cucumbers
• Red OR Vidalia Onion
• Half Bottle of Cucumber Dressing
• Block of cream cheese
• Sriracha Sauce (Dash of it or none at all)
Instructions/Prep:
• First things first – Soften your cream cheese for a good 20 minutes.
• Peel one cucumber in a stripe design and then chop it in small dices (small cubes).
• Peel the whole onion and then chop it finely (That is key so it is not an overwhelming taste)
• In a mixer OR in a mixing bowl, whip the cream cheese until is nicely whipped.
• Add in the diced cucumbers and keep mixing.
• Slowly add in the onions.
• Add half the bottle of cucumber dressing.
• Lastly add in about a TBSP of Sriracha sauce and keep mixing. Or don’t add any and stop at the previous direction.
Put mixture into a container and either eat right away or allow it to sit and settle for a bit.
What I like to do is make sandwiches out of the spread. I take wheat bread (use white if you like or any kind) and I like to flatten the bread. Then I spread the mixture onto the bread and top it off with a few cucumber slices and make “tea time sandwiches” out of them. I have made them for parties before and they are always the hit.
The Sriracha just adds a little kick to the spread. It can be used with or without it. Either way, it’s a delicious spread!
