My fiance, Katy makes an amazing Sausage & Spinach Dip that I thought I would share with everyone.
1 small package of mild ground sausage (example: Jimmy Dean)
1 small package of hot ground sausage (example: Jimmy Dean)
1 small FROZEN package of chopped spinach
1 vidalia onion diced
8oz cream cheese
Minced garlic (based on preference to how much)
Package of shredded cheddar cheese (based on preference to how much)

In a large skillet, fry the sausage while adding in the garlic and onion to it.
Add the cream cheese and continue to fry it in the skillet while mixing it in. (Make sure the cream cheese is well mixed and there are no clumps)
Add the frozen spinach. My reccomendation is, put the spinach in the middle of the everything in the skillet. Put the mixture on top it so it melts faster. Then break it up once it has melted and continue to mix thoroughly.
Drain the skillet.
Add in the shredded cheese and mix again.
In a large baking pan, put the mixture in it and put on top a good helping of more shredded cheddar cheese and bake for about 10 minutes.
Take it out and let it cool for a few minutes.
Eat it with chips, crackers, or just a spoon or fork!
