HOT SPRINGS — Battlefield crosses are a long-standing military tradition to honor the fallen.
While the practice has evolved since the Civil War, battlefield crosses are created with the deceased troop’s rifle planted barrel-first, into the boots with the helmet set on top of the rifle.
This year, The Omni Homestead pastry team decided to create a battlefield cross out of chocolate as a showpiece for the resort’s annual Memorial Day weekend dinner.
“We wanted to pay tribute to the men and women who gave their lives for our country, and to all who serve,” said Leen Kim, executive pastry chef.
According to Kim, approximately 70 pounds of chocolate was used in the piece.
Led by Kim and Gelyn Widelski, pastry sous chef, the 11-person pastry team worked for two weeks to create the display. They used a real helmet, rifle and boots as inspiration and paid close attention to every detail.
“Everything was made of chocolate, right down to the boot strings,” she said.
The piece also incorporated some signature features such as the Omni hibiscus on the rifle and the words “You are not forgotten” on the dog tags.
